The Santoku is based on a classic Japanese utility knife. The scalloped blade helps keep slices from sticking to the blade, and the broad surface is ideal for scooping and moving ingredients. The Damascus Blade is made with 10Cr15MoV steel, which balances beauty, corrosion resistance, and toughness, while maintaining a very sharp edge. It includes our signature cut-outs, which reduce weight at the widest part of the blade without impacting performance or comfort when applying pressure to the spine. These cut-outs also provide a bit of an edge, allowing you to flick the blade open with your thumb.
This knife features a dark-colored walnut handle that is both tough and beautiful. The handle shape is designed for a comfortable and secure grip, accommodating a variety of gripping styles. It is scalloped at the balance point, allowing for a gradual transition between the handle and blade.
